All I need to know is that ostriches (and their cousins the emus) are delicious and I can get their meat from a farm in Bucks County. I made friends with the farmer at a farm show some years back.
It's classed as poultry but the meat is red and has the texture of chicken but with the flavor of the most tender filet mignon. Yum!
I'm going to see if I have any left in the freezer...
