1.) Rent an old gas station and set up shop.

It worked for Ben and Jerry and Breyers.
As far as recipes go, I'm not much help, but I think Guar gum and carageenan are really important if you don't want to use so much of that expensive cream.
BTW, it is true, I am jealous.
