Mmmm Roasted Veggies!

I am currently roasting some vegs in the oven and man, they smell good! So very easy, too.

Pepper (red, yellow or orange) seeded and sliced
Green beans (Fresh, triple washed, trimmed in a bag)
Sweet Onion-cut up
baby carrots
1/4 cup olive oil
2 tblsp. minced garlic (in a bottle)
1 1/2 tsp. Italian dressing dry mix
salt/pepper
2 tblsp. Balsamic Vinegar
do all of the above,EXCEPT VINEGAR! THAT'S LATER! stir to coat veggies.

in 475 oven, roast 15 min. then stir, roast 15, stir; roast 15 min. stir.
after 45 min or so (veggies brown and tender) sprinkle 2 tblsp of balsamic vinegar over veggies and stir.

NOW: use as delish side dish OR pop them in blender with some heated broth (any kind) purree and -VOILA!-delish (and, healthy) soup!

So. Freakin'. Good.

I used a 9X13 inch glass cake dish (sprayed with PAM) to roast the veggies in, but you can use anything you like so long as the veggies are not totally squished. And remember, even though the pan looks stuffed full, the veggies shrink as they roast and lose water. It will be ok.
