I see the 9 degree difference. What were the probes stuck into? If it's meat, different parts could have different temperatures.
A quick test would be to fill a mug with hot water and use a rubber band to put the probes together side by side so that the tips are right next to each other, then drop them in the water. If you still get a 9 degree difference then one of the probes is wrong.
The only way to tell which one is right is by dropping in an old fashioned candy thermometer.
BTW, how does the Polder know the temperature that your oven is set to? Do you program that in or is there some interface?
