A half hour west of Charlotte is Crowder's Mountain state park. I wouldn't drive farther than that because it's more of a hill really. There are a couple of one or two mile paths up to the top which are labeled strenuous but aren't. This keeps the crowds away. Or you can rock climb. Puts you 800 feet above the surroundings and you can see Charlotte on a clear day. Nothing too special but it gives me a little exercise and a quick nature fix once a week. I'm itching to go deeper into the Smokies, having just read Bill Bryson's A Walk in the Woods but I think I'll wait until my daughter is older so I don't have to carry her.
When I lived in Cumberland, MD I used to love riding my bike on the old C & O Canal tow path. It goes all the way into D.C. and in the other direction it follows old railway beds all the way to Pittsburgh. It was nice easy riding since it was so flat and you were safe from cars.
