If you send her an email with a return receipt request I would indicate in the body of the email something like...
Sorry about the annoying return receipt request - I always use this on the first email I send to someone just to be sure a hyperactive spam filter doesn't intercept it.
Or in your own words. No way I'd send it without acknowledging how dorky it is (given the nature of the email) and that is a "one and done."
