Hack off about 1/2 pound and make this:
Bossy Nova Salmon Dip (stolen from Rachel Ray, but it's my cute name for it)
1 Brick (8 ounces) Cream Cheese, Softened
2 Tablespoons Heavy Cream
1/4 Cup Finely Chopped Chives
1/2 Pound Smoked Salmon or Lox, Diced
1 teaspoon Lemon Zest
1/8 teaspoon black pepper (to taste)
1/2 Cup Sour Cream
Mix Cream Cheese and Heavy Cream until smooth.
Stir in Chives
Stir in Diced Salmon
Stir in Lemon Zest
Stir in Black Pepper
Stir in Sour Cream
Serve with crackers. Makes 2-1/2 cups or 20 servings (2 tablespoons dip and 5 crackers each)
