My father's favorite marinade:
1 c dark beer
1 tsp dry mustard
1 tbsp grated garlic
1 tbsp grated ginger
1/4 c orange marmalade
1 tsp salt
1 tsp sriracha or other chili sauce
Combine well. Marinate lamb, beef or pork for 12-24 hours.
