I've done 55 mph on a bicycle coasting downhill through the foothills of the Colorado Rockies; but, did it at 02:00 hrs. when there was no traffic. Even if a vehicle appeared, I'd see it's headlights from a distance and have time to react. A full moon coupled with a bicycle headlight provided adequate illumination. Max speed was limited by the sharpness and frequency of road curves, the height of my center of gravity, and traction of the bicycle tires.

Body position doesn't help much until one achieves about 90 mph. That's when a body starts to pick up aerodynamic properties that can be used to stabilize position and control changes. At 110 mph, I've been able to lock a motorcycle throttle, take my hands away from the steering and raise them to shoulder level using wind resistance and my free fall (parachuting) control skills to keep myself and the bike stable.
