Underneath the quick reply box, there is a little checkbox that says "Show your signature." You can choose to uncheck it for any particular post.
In addition, signatures are only universal after the signature yes/no question is answered. So if you change your sig file, or add one for the first time, it will go and change your signature in all the old posts that had previously included one, but will not add one to any post that did not already have a signature.
