My mother-in-law told me that it comes from Lebanon, Kentucky.
Her father was with Swift Meats for years, he supplied local delis. The plural of deli doesn't look right. Delis. Delis. Huh. btw, UT, "chicken breast" was what it's all about. No tricks, nothing fancy.
