I tried making banana ice cream a few months ago (from a different recipe) but the mixture somehow managed to ferment in the fridge before mixing. The result was... not pleasant, and I'm not in a hurry to try it again.

Why make your own, when you can just buy Blue Bell's Banana Pudding ice cream? It comes with pieces of real Nilla Wafers!

I don't know if this could be the cause or not, but as you may know, bananas emit quite a strong gas during the ripening process, particularly when they're tending towards over-ripe. If your bananas were really ripe, it could have been the gas that caused the 'fermentation'.

Incidentally, did you know that if you store your bananas in plastic they ripen quicker? Also, if you want to ripen something else quickly, just put it in a plastic bag with a ripe banana. I sometimes do it with avocados if I can't get a ripe one on the day i want to use it.

I think you are spot on, Ali. The recipe called for "over-ripe bananas," but maybe the author didn't mean quite as over-ripe as we thought she did. We also made a mistake and put a hot sugar syrup in as opposed to a cool sugar syrup, so I think that may have sped up the process. I do know that the mixture turned a disgusting shade of brown and was completely inedible. We tried churning it in the ice cream maker, anyway, but there was just no saving it.
Maybe I'll try it again some day with "ripe" bananas instead of the over-ripe ones we thought the recipe needed.
