My guess is if the onion and garlic aren't cooking off correctly you are cooking it too fast at too high a temp.

I'm not much of a cook but meatloaf? Ground beef (I use ground chuck), a few bread crumbs, tomato sauce, onions, garlic, touch of Worcestershire, egg...made a big giant mud pie of it. Shape it. Put it in glass pan. Rub brown sugar into top. Bake 350 for about an hour.

Meatloaf is something I have never ever cooked. Yet I really love meatloaf...I probably should ask mum if she remembers the recipe she used to use when I was a kid. Haven't had it in years, nay decades.

Used to love Mum's homemade meatloaf. With gravy and boiled spuds. Mmmm lovely.


Hey Pam, mail me a slice when you're done :p

Also, if you do have a camera, it is a long standing Cellar tradition to post photos of cooking triumphs (and cooking disasters ;p).

I'd like to start a meatloaf exchange program.

we could each make a meatloaf, and mail it to the person below us on the list. Then they take a slice, and then mail the rest to the person below them.

This is how I make meatloaf:

Peel a sweet potato, wrap it in a wet paper towel, and microwave for 4 and a half minutes. Then let it sit for another 5 minutes (it will continue cooking on the inside during this time.) Mash it up (if it doesn't mash easily, it needs more cooking time,) then mix it with ground beef, 1/2 tsp salt, 1/4 tsp pepper, 1/2 tsp basil. Bake in a glass loaf dish for 45 minutes at 375 degrees.
