Saturday (as mentioned a while back) we cook the pig at the Lodge. Open house day. I will take lots of pics.
I will co- cook the pig and I am also doing six gallons of green beans.

Suggestions on what type of meat to use as seasoning in the beans? Please be budget minded.

Cook off a pound of bacon till crisp. Reserve meat. Combine drippings with coarse brown mustard, white (or cider) vinegar, a pinch of sugar. Dress cooked beans in hot bacon dressing; coarsely chop bacon and combine with beans just before serving.

Makes a hell of a lot of beans.

That sounds very tasty, indeed. I can't get too fancy, tho, as I have to cook six 1 gallon cans of them. I've decided to just cut up 3 lbs of thick sliced bacon into small pieces and drop it right into the pot. I will use the recipe you posted at home next time tho when I'm not cooking in such volume. Thanks all!:D
