Yeah, they know more than you think. I belong to a site where I would guess the average age is 65+. It's a Vbullitin site like this but the later version and lots of advertising for non paying members. I think the most I've measured is 64 cookies while just signing in as a paid life member. Anyway with all that shlt going on it hiccoughs sometimes, and these guys get flummoxed. The standard advice is, ask your grandchild to fix it. :blush:

Columbia River Steelhead Trout.

A little EVOO, pan on med-low, fish in, lid on. After ten minutes or so, fish out, done nicely. A little dill, some smoked salt, a dijon-chipotle mayo (didn't have the patience to make a proper aioli). So damn good.

Today is the rest of those Eyetalian sausages, and Murkin aigs.

It looked like this at the store. I asked the guy at the meat/seafood counter, are you *sure* this isn't salmon? I'd never seen orange fleshed trout before. Pale yellow, yeah. Not orange.

And I'm sure it came from a fuckin whopper like this. In the tray at the store, it fit, because they folded the thinner belly portion underneath to give it a nice, regular, rectangular shape. At home, when I opened it up, it didn't fit flat in my 13 inch Lodge cast iron skillet, it kinda surfed up the side a bit, less than an inch. It was probably a pound and a half.

That chop wasn't overly delicious (it was pretty good, that seasoning is pretty mild), but, at one point I cut off a bite with my fork, just to say I cut it with a fork.

That chop was an inch and 7/8s thick, and I cooked it for almost an hour at 350.

Today's lunch with a very old friend who I haven't seen nor spoken with in about 20 years.
Something about finding out he slept with my ex-wife back then was a little off-putting. We met today and buried the hatchet, so to speak. It was very ... what is the word? Relieving? I hold no more animosity toward him. Losing the negativity and letting the grudge go feels incredible.
Oh, I had a chicken taco salad at La Tolteca with extra sour cream and guac with a side of Yuengling. It was great.

Bruschetta of the day - Made with fig spread, goat (I think) cheese, prosciutto, drizzled with balsamic vinegar

Michelangelo - (Sandwich on baguette) Prosciutto parma, fresh mozzarella, crisped pancetta, broccoli rabe, olive oil, roasted red pepper pesto

First two items were shared with a friend. The sandwich was all me. Fat and happy

90% of my diet is chicken. My ex used to start looking for feathers when he realized just how much chicken I eat. Now that I am looking to put on muscle, I try to get 5 ounces every time I eat it

Quite tasty. I may experiment with the seasoning on the ground meat (turkey is kind of bland) and change the black soy sauce to oyster sauce for a different flavor than all soy.
