Today's soup has spinach in it.
It is suppose to be barley mushroom but it called for,leeks,turnips,celery,carrots,beef broth,garlic and spinach plus mushrooms. Well how would a mushroom compete with all of that! |

It ain't soup but tonight I made fettucini with shaved asparagus and Parmesan. Garlic, butter, lemon juice, lemon zest, and black pepper make up the rest. Quite good eatin', might consider stirring in some Spike for a variation. Pee smells duly asparagussy afterwards.
Next time, a freer hand with the lemon zest and perhaps even more asparagus shavings -- they blend with the fettucini and reduce the quantity of carbs you take in, if this is a thing you have to keep a lid on. This is mostly a side dish unless reinforced with something like pancetti or chicken breast. |

My friend made a yummy soup for lunch today. When she gets the recipe to me, I'll share. very different fromt he soups I normally make. It had bacon in, though, so clearly a winner.

I just made Chicken Pot Pie Soup last week. It's all gone though :(

Green Spring Soup:
Chicken broth Assorted spinach, asparagus, leeks, green onions, peas. Saute veggies till just tender, add to broth. Puree half the soup. Recombine. Use of bacon drippings in the saute is at the discretion of the cook. |

Today I made Wild Rice Mushroom soup. 1 tablespoon olive oil Half a white onion, chopped 1/4 cup chopped celery 1/4 cup chopped carrots 1 1/2 cups sliced fresh white mushrooms 1/2 cup white wine, or 1/2 cup low-sodium, fat-free chicken broth 2 1/2 cups low-sodium, fat-free chicken broth 1 cup fat-free half-and-half 2 tablespoons flour 1/4 teaspoon dried thyme Black pepper 1 cup cooked wild rice ( I substituted a small packaged rice mix without the spices) Put olive oil in stockpot and bring to medium heat. Add chopped onion, celery and carrots. Cook until tender. Add mushrooms, white wine and chicken broth. Cover and heat through. In a bowl, blend half-and-half, flour, thyme and pepper. Then stir in cooked wild rice. Pour rice mixture into hot stockpot with vegetables. Cook over medium heat. Stir continually until thickened and bubbly. ( I cooked the flour in with the vegetables instead of mixing it with the milk. I used huge sliced baby bella mushrooms instead of the white and a full cup of carrots and celery each. I garnished with extra fresh thyme and black pepper) It was awesome ! |

Chicken-quinoa-veggie soup onions cellery zuchini garlic softened in a couple TBSP olive oil, pureed also, chicken breasts, mushrooms, carrots, peas, half the jar of whole peeeled garlic cloves, braised in chicken broth, sage, adobo, lots of black pepper, cellery salt. Chop up chicken when cooked, add back to broth/vegggies also, quinoa cooked just like rice Combine pureed veggies, cooked veggies and chicken, quinoa, more chicken broth. Add some kale and some canned diced tomatoes, drained. Simmer until kale is soft. Squirt some lemon in there... |
