I just made...

... a pineapple and coconut cake. It's a variation on the coconut cake I've made a number of times before. So far it's looking pretty good as it cools, but the proof will be in the tasting as always.

Here's a pic before icing.

What did you just make?

Alluvial 05-26-2009 09:32 PM

I love that plate! Cake looks yummy too.

I'm trying to make some ribs, in the oven. So far they aren't too tender. I'm hoping another hour will fix that. :: crosses fingers ::

Beestie 05-26-2009 09:40 PM

There is a face in that cake. I can't tell who it is tho. Its not Mary, its some old dude.

Shouldn't the ribs have come BEFORE the cake?

Nah, they're all going to the same place anyway. :p

Chocolatl 05-27-2009 05:46 PM

...a white cake with strawberry frosting and strawberry filling. Kitsune made strawberry jam, yesterday, and it didn't set up quite right, so we decided to go ahead and use up the delicious strawberry goo.

Aliantha 05-27-2009 05:53 PM

I only have one thing to say to that cake choco and that's YUMMO!

Aliantha 05-27-2009 05:56 PM

My cake tastes nice, but it falls apart a bit when it's cut. The consistancy is right, but I think next time I'll use pineapple juice instead of crushed pineapple. It's the fibres of the pineapple that're making it crumble when it's cut. Maybe I need a sharper knife. lol

ZenGum 05-27-2009 08:06 PM

Does anyone know how to get drool off a keyboard?

Clodfobble 05-27-2009 08:14 PM

Bleach will take care of it, guaranteed.

Aliantha 05-28-2009 11:48 PM

Creamy chicken casserole with mushrooms, potato, carrots and leek. It's in the oven cooking and smells delish!

Can't wait for dinner.

Alluvial 05-29-2009 07:34 AM

What was your cream sauce? (sounds wonderful!)

dar512 05-29-2009 10:01 AM

Choc, that cake is a beauty.

Chocolatl 05-29-2009 11:07 AM

Thanks! Turns out it tastes pretty good, too. It's already half gone and there's only two of us at home.

Strawberry WTF. I used angel food cake. No lady fingers around here.
Using the below recipe. no way will all fit in pan, but it's nice to eat later, lo-cal ya know.
3 pkgs. plain ladyfingers
1 lg. can frozen strawberries
1 tbsp. cornstarch
1 pt. whipping cream
1 (8 oz.) pkg. cream cheese
1 (3 oz.) pkg. cream cheese
1 c. sugar
1 tsp. vanilla

Drain juice from berries. Cook juice and cornstarch in saucepan, stirring regularly, until clear. Let cool and stir in berries. Beat cream cheese, sugar and vanilla until stiff (like whipped cream). Beat whipping cream until peaks form. Fold whipping cream into cream cheese mixture.
Line the sides of a 10-inch springform pan with ladyfingers, standing on end, rounded side facing out. Line the bottom of pan with a single layer of ladyfingers.

Put 1/2 of the cream cheese mixture over the ladyfingers. Put in another layer of ladyfingers. Put in the remainder of the cream cheese mixture. Put the berry mixture on top. Leave in refrigerator overnight.

buster, that reminds me of an old recipe from back home called "pink stuff". Heh.

Today I made a peach pie. It ain't round, but I think it will still taste alright.

Aliantha 05-31-2009 06:06 PM

Alluvial, what are those things to the left of the peach pie?

The cream sauce was exactly what it says. Just about a half a cup of cream and some chicken stock added to the leeks, mushrooms and garlic after they'd been sweated down a bit. Pour the whole lot over the chicken, potato and carrots and then pop the lid on and cook for about 3 hours in a medium oven.

It was yummo.

Alluvial 05-31-2009 07:07 PM

Those are 'new' potatoes. The small red kind? It's a tradition here to just peel around the middle - I must admit I don't know why. I blistered them a bit in the frying pan, then put a finger depth or so of water, put the lid on and let them cook thru.

Hmm... leeks are looking good at the grocery this week. I'm always looking for new ways to fix chicken, I may try yours!

Aliantha 06-01-2009 05:56 PM

I just made lemon cordial for the kids. They'll probably think it needs more sugar, but I think it's fine. I'll use it for my vodka if they wont drink it. :)

Yesterday I made cherry cake and shortbread biscuits (cookies).

It's been 2 weeks since I have had anything sweet so I am making chocolate pudding.mmm

OH Ali, that looks wonderfully delicious! Is that the lemon cordial? Cake? and sugar cookies. My favorite. I would love the recipe to the cake if you wouldn't mind.

Loooks :yum: deeeeeeelicious.

but, how the heck are you going to slice that thing?

DanaC 06-04-2009 07:33 AM

You're not supposed to slice it. You've to look at it in awe.

classicman 06-04-2009 08:23 AM

"Whats with the makeup brush on the right in the final photo?" he asked, looking for new food tips and tricks.

Alluvial 06-04-2009 10:58 AM

Those chocolates that look like shells are SO good, too.

Chocolatl 06-04-2009 04:21 PM

Ali, that's beautiful! And looks delicious, too. That's a wedding cake for friends, right?

Aliantha 06-04-2009 05:16 PM

It's my friends 40th birthday, so it's my present to her. She was going to do her own cake (as mothers usually do if they want one), so I had to stop that.

You slice it like any other cake Zen. lol and then you gobble it up and say yumm. :)

Classic, the make up brush is there because when I sprinkled the 'sand' over the cake I had to brush it off the shells, firstly because it didn't look good, and secondly, because it wouldn't stick there anyway. (the sand was sugar with a bit of gold colouring mushed into it. I was pretty happy with how that bit turned out. It was the only thing I wasn't too sure of).

Anyway, I get to present it to her tomorrow. I hope she's going to like it.

Unless she's severely allergic to chocolate, she's going to love it. Just looking at it is making me drool a little.

Aliantha 06-05-2009 06:20 PM

She loves chocolate. She asked for mud cake, so all the rest was just a natural progression. :)

Alluvial 06-06-2009 08:27 PM

How did your friend like the cake ?

I made some brownies today, but they are ugly so I'm not posting them. :p

She loved it, and it was all eaten. Good stuff.

My boys loved it so much we had to make one today for their lunches this week. It's much less fancy though. One layer with chocolate frosting and sprinkles. :)

About the brownies...did they taste good? If so, who cares what they look like. :D

DanaC 06-07-2009 05:57 AM

Oh gosh those tacos look delightful. Haven't had tacos in ages!

Undertoad 06-08-2009 12:17 PM

Tacos with srs greens, interesting! The lettuce is more like filler in most tacos, this is a good way to go.

jinx 06-08-2009 12:26 PM

I eat tacos a lot. Sometimes more than once a day.

I put a flat griddle over two burners and fit 4 corn tortilla shells on it.. wait a few minutes until they start to curl up, then flip. Sprinkle with a little cheese, diced chicken or a few beans, a spoon full of hot salsa, couple drops of habenero sauce and a fat slice of avocado. When melty/crispy enough, remove from heat and fold around a handful of greens.
They're so awesome...

I think the ones pictured have some red pepper in there too...

You have great ideas. I put chopped pecans and sprinkles in the brownie batter. Yes they're scrumptious!

Tonight I was adventurous and made a pasta salad with a peanut sauce. It was pretty good.

Aliantha 06-08-2009 11:45 PM

Talk about fusion meals! lol

I would never have thought of doing that.

Alluvial 06-09-2009 09:19 AM

I can't take credit for the idea; I came across the recipe on another board and thought I'd try it. It's a refreshing change from mayo-based salads & standard "italian" salads.

Sundae 06-09-2009 11:29 AM

Alluvial, I'm sure you're a lovely lady.
But you sure know how to ruin a salad.

Peanuts?
Sigh.
Might as well go ahead and put banana in it now.

Pie 06-09-2009 12:07 PM

Yesterday, it was brats with a side of sauteed diced radishes, radish greens, spring shallots and new potatoes.

Tonight it's going to be grilled flank steak and asparagus with ... polenta? or a little pasta? in a tarragon-caper butter sauce. Subject to change if Badger doesn't make it back from Dawl-gren at a reasonable time. Or if I just change my mind. :)

Turkey and Italian Sausage Meatloaf!
1: Before oven
2: After oven...I ated it before I remember to take another pic, oops.

Aliantha 06-11-2009 06:25 PM

Speaking of meatloaf, it's not something we 'do' over here, but i decided to make one a couple of weeks ago. It went down a treat with the family. They really loved it. I'm going to do another one soon. Hmmm...Maybe even tonight! Thanks for the inspiration mtp. :)

Alluvial 06-11-2009 07:07 PM

If you like meatloaf, you should try the meatball recipe which Jill posted in the ultimate recipe thread. :)

This is a platter I've put together for entree tonight.

Attachment 23788

This is a prawn salad with kiwi fruit, roasted grape tomatoes and watercress, to be served with a lime wasabi dressing.

Attachment 23789

I've also made a spinach pie and will serve boiled baby potatoes in their jackets with sour cream and chives, and we'll be BBQing the amberjack (15kg/35lb) Dazza caught last weekend.

To finish, we'll be having chocolate mud cake (cause that's what the kids wanted).

Sundae 06-13-2009 05:44 AM

Wow - my kinda meal!

I'm also considering a meatloaf dinner for the future too.
Trouble is, the only lw fat meatloaf recipe I have is bleurgh - I know, I tried it.

Have to go a-searching...

kerosene 06-14-2009 11:01 AM

I made my most recent meatloaf with ground turkey instead of beef. I think it was a little less fatty. It was just as good, anyway.

DucksNuts 06-15-2009 05:04 AM

We have Meatloaf a couple of times a month, because its super easy and I can slip a heap of grated vegies into it without the little people noticing too much. Actually, its only the redhead that is anti-vegie, but he devours anything fruit like.

Fruit kebabs are a winner here too, coz the boys can *build their own*.

Sundae 06-16-2009 12:41 PM

Dad has been complaining that we only eat what Mum and I like recently.
Not true, because Mum & I stopped cooking together about 2 months ago.
And I have been eating separately in this time - see weight loss chart for verification.

But instead of challenging his assumption - he is in his 70th year after all - I offered Mum spag bol this week as a sop. Now, she loves it when I cook - she doesn't have to cook AND I wash up as I go along. The usual deal is one cooks and the other cleans up, so there is far less work when I cook (also because I'm of a one-pot style).

So it's turkey mince (already bought and in the freezer) and an Aldi vegetable sauce. Aldi is a cheap European supermarket, but I'm not gloating over what the sauce cost me, it's the fact it's low fat and loaded with veg (carrot, courgette and peppers) and he thinks he's getting away with something because he's getting meat and shop-bought sauce and pasta (hehehe).

Regardless, he'll enjoy it, and that's really what's important.
