Dec 19th, 2016: Rôti Sans Pareil

OK, so the kids went to your ex's for Thanksgiving and his trophy wife served Turducken, and the kids can't
stop talking about it. Well you'll blow them away at Christmas with Rôti Sans Pareil!

From L’almanach des Gourmands, an 1807 cookbook written by Alexandre Balthazar Laurent Grimond de la Reyniere.

Quote:

His recipe calls for a bustard stuffed with a turkey stuffed with a goose stuffed with a pheasant stuffed with a
chicken stuffed with a duck stuffed with a guinea fowl stuffed with a teal stuffed with a woodcock stuffed with
a partridge stuffed with a plover stuffed with a lapwing stuffed with a quail stuffed with a thrush stuffed with
a lark stuffed with an ortolan bunting stuffed with a garden warbler stuffed with an olive stuffed with an anchovy
stuffed with a single caper, with layers of Lucca chestnuts, force meat and bread stuffing between each bird,
stewed in a hermetically sealed pot in a bath of onion, clove, carrots, chopped ham, celery, thyme, parsley,
mignonette, salted pork fat, salt, pepper, coriander, garlic, and “other spices,” and slowly cooked over a fire for
at least 24 hours.
That'll show that bitch.

No wonder the French don't get much done after lunch! :)

I'm going to go out on a limb here and say that Alexandre Balthazar Laurent Grimond de la Reyniere just made that shit up. He never cooked this dish. It's complete BS.

Yeah, but who's going to be able to tell?

Here's more Christmas menus from the past.

Bullshit. A duck is bigger than a chicken, especially in the days of non-hormone-jacked chickens.

xoxoxoBruce 12-19-2016 08:28 PM

What, you've never seen a small duck?

That is a giraffe and a duck.http://uploads.tapatalk-cdn.com/2016...0e68880117.jpg
