Sweet Jalapeno Relish

To help with the heat today I canned 7 pints of relish. 12º tonight and tomorrow night. I think tomorrow I'll bake lemon blueberry muffins. Maybe date nut muffins next day.

Are you willing to share the recipe for sweet Jalapeno relish? Sweet and hot is my favorite.

48 oz canned diced, I'm not chopping peppers.
1 quart cucumber ± finely chopped. I used 4
2 large onion -- finely chopped I used 12 oz frozen
One red, yellow bell for color
1/4 cup salt -- + 2 Tbl
5 cups sugar
4 cups cider vinegar
4 teaspoons pickling spice

Combine cucumbers, onion, bell peppers and the 1/4 cup + 2 tablespoons of salt in a large glass or ceramic bowl; cover with cold water & let stand for 2 hours. Drain thoroughly, pressing on the vegetable to remove excess liquid.

Combine the sugar and vinegar in a large pot; tie the pickling spices in cheesecloth and add to the liquid. Bring to a boil & simmer for 10 minutes. Add the vegetables & simmer for 10 minutes.
Add peppers at last 5 minutes.
Remove spice bag.
Pack into hot jars & process for 10 minutes in a boiling water bath.
I drained the peppers. Drained and put the other stuff in a salad spinner. ½ at a time. I also seeded the cucumbers. Also used a french fry cutter for cukes.
