There's as many kinds of "Metal" as there are "Jazz."

Imagine the degrees of separation between Kenny G, saxophonist, and John Coltrane, saxophonist.

One could say, of course, that "smooth" jazz isn't real jazz (and I would tend to agree with that) but the fact is, as individuals, we don't make these distinctions for anybody other than ourselves.

The concept of "genre" is actually a marketing tool. If one accepts the concept, they aren't endowed with the ability to define it's parameters. As a marketing tool, it is determined by the market.

My personal, nostaligic feeling about what "metal" consists of is based on my own experiences. I grew up listening to Iron Maiden, Slayer, Metallica, Pantera, and Yngwie Malmsteen. I also listened to Rush, but I didn't call that metal. I also listened to RATT and Motley Crue, and I did call that metal.
