				Carbohydrates
			 
			
			I have a pack of Bob's 10 grain cereal. It list 26 grams of carbo. The fiber and protein add up to11g. Fat is 1g. Where in the sam hill is rest of carbos??? One serving = 130 calories.

			Yah. But so do the fat and protein. Grains are higher in carbs but have some of the other stuff too.

			So Bob's 10-grain cereal has, in each 1/4 cup, 28 g carbohydrates and 5 g fiber. The fiber isn't absorbed (it's the good stuff that keeps your gut healthy), so subtract it from the 28 g to get 23 g carbohydrates. There are 0.0 g sugars, so no simple carbohydrates. The 23 g are complex carbohydrates, i.e. starches of one sort or another that are broken down more slowly than simple sugars.  The calorie count is in kcal, which is a measurement of heat generated. The grams of protein, carbs, and fat are units of mass and will not add up to the calories per serving - they're different things.

			In general, paying attention to protein/carb/fat grams in a diet works better than worrying about total calories. But also, consideration of sources is important too...like ortho mentioned...certain carbs are digested and assimilated differently...just like different fat and protein sources.
