One of my favorite quick fixes is pasta, any kind (already cooked, though), with some chili on top (any kind) and some grated cheese.

Potato, chili and cheese works well, too.

Broccoli is disgusting. I like using the summer squashes (zucchini, yellow neck).

Oooh, I just remembered something I ordered in a restaurant once: one of those little souffle boat dishes with a couple of whole chilis (the green, out of the can, ortega kind), topped with tons of cheese and baked (or nuked) until the cheese has really been cooked a bit (more than just melted). Serve it with bread, crackers, tortillas, tortilla chips, etc. Nice little easy to do meal.
