We stayed at The Westin, about half way between Cabo San Lucas and San Jose Los Cabos.
They had a nice welcome dinner buffet for us, with grilled lobsters, lobster fajitas, fish fillets, chicken enchiladas, and tons of traditional mex sides. The next day we went on the atv tour, then to the CaboWabo for an open bar, buffet dinner and 2 hour private concert with Sammy Hagar. Following day was lounging at the pools and beach volleyball tourney with free beers, then in to Cabo for sightseeing, then back to dinner at a fancy restaurant in the hotel. I had foie gras and lobster helper. I  Wachovia. Mexico is prettty awesome too.

I heard you get all the sushi you can eat while you're out on the boat too.  Turtles had laid eggs on the beach by our hotel, and the hatched while I was there. They had the area roped off so nobody would accidentally walk on the eggs.
