Thanks for the link Juniper. I found 1/4 buys with a list of cuts.

Many years ago I bought from a slaughter house and got not one steak except for a round. I took it for granted people were honest and didn't inquire, having grown up butchering our own beef, I knew there should have been more than just round chucks and stew.

That still bothers me to this day. sheesh. Now with people wanting more organic products these 'eat wild' ranchers come to the Saturday markets.
That's great because single organic steaks at the health food stores are not that great and too expensive.

Now I know where to buy a decent quarter cow if I want thanks to you Juniper

Sky, we have bought a half a butchered cow before and the only good meat was the ground beef. The steaks were ok, but really not that great. I am not sure we would do it again. If we did we would go to another farmer. The price was certainly right.
