Really good Jambalaya recipes?

Hey all.

We used to have a Cajun restaurant in town that had the finest Jambalaya ever conceived. The owner was from Louisiana and was an unspeakably talented chef. Since the place closed down a couple years ago (he moved back home), I have yearned for some good Jambalaya. Yearned! I have found recipes, and restaurants that serve it, and while many are somewhat tasty, it's nowhere near the tear-inspiring tastiness of the Cajun Cafe.

So does anyone have a really killer Jambalaya recipe? One on rice (some are on pasta... strange) with sausage, chicken, shrimp (and/or crawfish) with a good bite to it?

Thanks... if I find the right one, then I'm throwing a cajun party at my place, and y'all are invited.
