I did that to 2 chickens today for the grill, sorry I forgot the photos till was too late. I've seen this done in Bangkok on the street years ago. I used bamboo skewers to pin. Soaked in some of Claude's brisket marinade, then after it got to cooking and fat cooked out, some Cattlemens classic.
Of course I used a dash of Toney's, blk pepper and salt. Buster -0 Christians -1
